23 December 2021, Lipari, Italy - A farmer makes macaroni, an organic pasta made with ancient wheat flour of the Senatore Cappelli variety, grown and ground by himself, following traditional processing methods, in the Piano Conte district, in Lipari, in the Aeolian Islands Archipelago, north of Sicily. Recently in the Aeolian Islands there is a return to agriculture, with particular attention to products and methods of ancient tradition, such as the cultivation of ancient wheat seeds, a variety of grains that were used in the past in southern Italy and that never underwent no modification by man. Some examples of ancient wheat varieties are Senatore Cappelli, Maiorca, Russello.
