30 May 2019, Arapa, Peru - Trout fishes are cleaned, cut, and vacuum packed at the Truchas Arapa plant. Most of the staff working at Truchas Arapa are women from the Quechua and Aymara indigenous communities. Eva Maria Luque de Zapana started as a cleaner in the processing plant and learned the cutting techniques to become one of the cutting experts.
