Laboratory analysis of street foods has isolated various pathogens, and other microbiological indicators. - - General: General. The Food and Agriculture Organization of the United Nations (FAO) has carried out a number of activities to evaluate the problems associated with street foods and to work with governments to develop programmes to improve their quality and safety. The results of these studies have been discussed at the regional and global levels. Strategies developed include: licensing, food inspection and analysis infrastructure, potable water, garbage disposal, training to vendors and consumer education. Legislation and regulations need to be updated accordingly, while Regional Committees of the joint FAO/WHO's Codex Alimentarius Commission are preparing Codes of Practice that will apply specifically to street foods.
