Under the United Nation Development Programme, FAO is providing assistance to the Government with a view to developing the national dairy industry. The construction of the St. Louis milk processing plant represents the first phase of the joint FAO/UNICEF sponsored milk conservation. The assistance includes the establishment of milk collection/pooling centers and required milk processing and delivering facilities. The Dairy Cooperative, UCOLAIT, collects milk from villages or fixed points along the roads in a large area in the region of St. Louis for processing at the milk plant. Pasteurized milk and milk products are either sold in St. Louis or taken over 260 km. to a refrigerated warehouse in Dakar for distribution and sale from kiosks and tricycle-carriers around the city.
